Recipe Makeover

Here is what we made for dinner last night... or really I should say "here is the recipe that we losely followed last night."  I bet it's pretty good if you make it right because it sure was good with all our substitutions!  We are trying to really use up what we have in the house instead of grocery shopping.  Read through this yummo recipe then check out how WE did it below.

"We're Taking Dance Lessons" Chicken Sausage and Lemon Fettucine

Ingredients:
1 pkg. Hillshire Farm Chicken Hardwood Smoked Sausage
8 ounces uncooked fettuccine
2 tablespoons olive oil
2 garlic cloves, minced
1 cup cherry tomatoes
1 cup frozen peas, thawed, drained
1/4 cup fresh lemon juice
2 tablespoons chopped fresh oregano
1/2 cup (2 ounces) shredded Parmesan cheese

Directions:
1. Cut sausage in 1/4" slices; set aside. Cook pasta according to package directions. Drain pasta and keep warm.
2. While pasta is cooking, heat olive oil in a large non-stick skillet over medium heat until hot; add sausage. Cook, stirring frequetly for 4 minutes or until sausage is lightly browned. Add garlic; cook stirring consistantly 1 minute. Stir in tomatoes and peas and lemon juice, cook and stir for 2 minutes.
3. Stir in fettuccine and oregano; toss lightly. Top with shredded cheese.
Yield: 4 servings (about 1-1/2 cups each)
Prep Time: 10 minutes
Cook Time: 20 minutes

Here is what we did...
instead of fettuccine and then sprinkled with parm. cheese I used cheese stuffed spinich tortellini.
instead of chicken sausage we used whichever version of Hillshire Farms sausage we had in the freezer.
instead of peas - green peppers from the garden.
instead of lemon juice, don't laugh, we used super concentrated pink lemonade from a powder mix!
we did use olive oil, oregano (dried, not fresh of course), garlic, and tomatoes.

With all those crazy changes, it still tasted great!
We would actually make it that way again.
(although I would rather use real lemon juice next time)
